Cool Cucumber Dip
8 Oz Spreadable Cream Cheese or 8 Oz Raw Vegan Sour Cream
2/3 Cup Cucumber Peeled
2 Tbl Chopped Fresh Dill
1 Tbl Chopped Fresh Parsley
1/8 Cup Vidalia Onion, minced
1 small garlic clove, pressed (optional)
1/4 tsp black pepper
1/4 tsp sea salt
- Put in onions in food processor. Pulse a few times to chop well. Peel and roughly chop cucumber.2. Add cucumber, garlic, dill, parsley, salt, and pepper to food processor. Pulse a few times to blend well.
3. Put cream cheese in a bowl and stir to make a smooth consistency. Add the cucumber mixture and stir well.
4. Serve with crackers, carrots and other vegetables or pita bread. Mix it up by adding green peppers, purple onions, red peppers, cilantro or other tasty combinations. If you use a soft cream cheese it will be like a dip, and a harder cream cheese will be more like a cheese ball if you pat the juices out of the cucumber.
