Tabouli

1/4 Cup dry Garbanzo beans cooked and drained (about 1/2 cup cooked)

1 1/4 cups raw bulgar wheat

4 cups boiling water

1 1/2 cups minced parsley

3/4 cup minced mint

3/4 cup minced green onion or chives

3 Medium tomatoes chopped

3/4 cup lemon juice

1/4 cup olive oil

1 1/2 tsp sea salt

1 tsp freshly ground pepper

bed of lettuce

Pour the boiling water over the bulgar and let it stand until the bulgar is light and fluffy.  Drain excess water in a strainer or press with hands to remove as much extra water as possible.  Mix the bulgar with the cooked beans and the remaining ingredients.  Chill for one hour or overnight. Serve on a bed of lettuce or greens.
